Fifteen Cornwall trainees to bake harvest festival loaves
Trainee chefs at Fifteen Cornwall will be learning the art
of making traditional harvest loaves on Friday when they bake
loaves of bread for distribution to the emergency services
in Newquay.
Under the expert guidance of Fifteen Cornwall's in-house
Master Baker Ken Rankin, all of the trainees at Fifteen Cornwall
will spend four 2 week placements in the restaurant bakery.
Baking all of the fresh bread and pastries needed for the
restaurant means that the trainee chefs have been getting
some very early starts as Ken and his baking apprentices get
to work when the restaurant closes, working shifts that start
at midnight and end at 8 o'clock in the morning.
The production of the harvest loaves is a part of the students'
bakery training and an important part of the Fifteen Cornwall
programme. The loaves will be distributed to the emergency
services by the Newquay Christian Centre in recognition of
the work they do in saving lives and protecting the local
community.
Fifteen Master Baker Ken Rankin is looking forward to producing
the harvest loaves with the trainees: "Once the
students get over the body shock of working the unsociable
hours they really get a lot out of their placements in the
bakery. We produce a wide variety of breads for the restaurant
but harvest loaves are certainly the most labour intensive
due to the sheer amount of decorative shaping of the dough
so it's a chance for the trainees to harness their creative
flair and learn another new skill."
Trainee chef Emily Radcliffe, 19, originally from Launceston
but now living in Newquay adds: "I really enjoyed
my time on bakery placement because it offered an amazing
contrast to working in the busy kitchen where it's really
fast paced and noisy with so much going on all the time. There's
also the added bonus of seeing the sun come up over the bay
which is an awesome sight. Baking bread is a slow process
but I really enjoyed the change of pace for a while and can't
wait until it's time for my placement to come back around
again."

Isles of Scilly has invested in Fifteen Cornwall through the
European Regional Development Fund (ERDF) and via the Jobcentre
Plus co-financing with European Social Fund (ESF).
